TEROLDEGO

VIGNETI DELLE DOLOMITI IGT

About TEROLDEGO
This indigenous red grape variety is only cultivated using sustainable techniques in our vineyard plots in the “Piana magnifica”, the area which surrounds the wine cellar and named “Europe’s most beautiful garden under vine.” by famous Italian geographer Cesare Battisti. Our group is famous for being the first producer of Teroldego.
TEROLDEGO
Our indigenous grapes are hand harvested. After soft pressing, the wine undergoes fermentation with selected yeasts for 7-10 days at 24 ° C s to preserve Teroldego’s rustic and fruity character. This is followed by malolactic fermentation with selected bacteria. Finally, the wine matures in stainless steel for 6-to-8 months. A small portion – around 10% - of the wine is aged in large barrels specifically to soften the tannins and provide a balanced structure.
Colour: garnet red.
Fragrance: intense bouquet featuring spices and ripe red fruits and a hint of vanilla bean derived from the oak.
Flavour: dry and complex with elegant tannins.
It pairs well with roast beef, coq au vin, roasted game, charcuterie like speck and salami, risotto, lasagne and mature cheeses.
