About PINOT GRIGIO
Pinot Grigio was first grown in the foothills of The Dolomites around 1950 to produce a Rosé wine. It was only after refined progress in enology in the 1970s that wineries were able to obtain a white wine rich in flavours, more supple and with a lower acidity. Pinot Grigio is produced with grapes from the vineyards along the banks of the rivers which flow through our valleys. Here it finds its ideal habitat, thanks to the fertile soil.
Produced from totally hand-picked grapes which are delivered to the winery within a few hours. Here they are selected and then gently pressed with pneumatic presses. The must is then cooled at 15°-16°C and left for an entire night to clarify. The next day the yeast is added, and a temperature controlled alcoholic fermentation commences between (16°-18°C). At the end of the fermentation the runoff takes place, and the wine is left on the lees until it is bottled.
